I first encountered these decadent bars labeled as Hello Dolly Bars, reportedly named around the time of the Broadway show of the same era. They also appear under names like Magic Cookie Bars or Dream Bars. No matter the name, one bite reveals a satisfying contrast of crunchy edges, chewy centers, and a sweet, nutty topping that makes them memorable.

If you enjoy layered bar desserts, these are delicious to serve at potlucks, holiday gatherings, or simply as an indulgent everyday treat. The recipe is straightforward and forgiving, so it’s easy to adapt with substitutions or add-ins.

How to Make Hello Dolly Bars

The bars are built in layers, starting with a graham cracker crumb crust. For an 8 x 8-inch baking dish you’ll need about 1½ cups of finely crushed graham crackers (roughly 10 full sheets). Combine the crumbs with ⅓ cup melted butter and 3 tablespoons sugar, mixing until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a lightly greased 8 x 8-inch baking dish to form the crust.

Bake the crust in a 350°F (175°C) oven for seven minutes, then remove and let it cool briefly while you prepare the topping. Once the crust has cooled a bit, layer one cup of semi-sweet chocolate chips evenly over it, followed by one cup of sweetened flaked coconut and one cup of chopped pecans. Finish by pouring one 14-ounce can of sweetened condensed milk evenly across the top—this will seep down and bind the layers as it bakes.

Return the pan to the oven and bake for 25 minutes, or until the top is bubbly and lightly golden. For cleaner slices, cut the bars while they’re still warm and soft; then allow them to cool completely so they firm up before serving.

How to Store Hello Dolly Bars

Store cooled bars in their baking dish covered with plastic wrap to keep them from drying out. At room temperature they will stay fresh for up to three days; refrigerated, they keep well for about a week.

To freeze, either wrap the whole pan in plastic wrap and aluminum foil or cut the bars and wrap pieces individually in plastic wrap, then place them in a freezer bag. Thaw cut bars at room temperature for a few hours before serving.
