Last week my son Benjamin published his review of the book The Hunger Games and included a recipe for a fictional lamb stew that, in the story, is served with wild rice. That inspired me to create a straightforward, flavorful wild rice side dish: wild rice cooked with sautéed red onion, finished with pistachios and fresh cilantro. It’s simple, rustic, and pairs well with hearty mains like lamb, beef, or roasted vegetables.

I don’t eat rice every day, since traditional Paleo guidelines recommend limiting grains and similar ingredients because they can contain anti-nutrients such as lectins and phytates. Wild rice is often considered separately from common cereal grains—some classify it as a grass—but it still contains more carbohydrates than vegetables or protein sources. That said, I do include rice occasionally in my family’s meals. My boys are active and benefit from starchy carbohydrates on occasion, and they get a kick out of eating a dish inspired by a favorite book. This recipe keeps things clean and simple: use whole (not quick-cooking) wild rice, sauté the onion to bring out sweetness, cook the rice in flavorful chicken stock or water for a vegan version, then fold in pistachios and cilantro for texture and bright herb notes. The pistachios add healthy fats and a pleasing crunch; cilantro gives a fresh finish. Season to taste with sea salt and black pepper.

Ingredients

  • 1 cup whole wild rice (not quick-cooking or blended varieties)
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup chopped red onion
  • 4 cups chicken stock (use water to make this vegan)
  • 3/4 cup pistachios
  • 1/4 cup chopped cilantro
  • Celtic sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse the wild rice thoroughly under cold running water to remove any debris.
  2. Heat the olive oil in a medium saucepan over medium heat. Add the chopped red onion and sauté until translucent and slightly softened, about 5 minutes.
  3. Add the rinsed wild rice to the pan with the onions and toast gently for another 5–10 minutes, stirring occasionally. This step deepens the rice’s flavor.
  4. Pour in the 4 cups of chicken stock and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer gently.
  5. Cook for approximately 45 minutes, checking periodically. Wild rice can take longer depending on the brand; the grains should be tender, slightly cracked open, and not mushy.
  6. When the liquid has been absorbed and the rice is cooked through, remove the pan from the heat and stir in the pistachios and chopped cilantro. Season with Celtic sea salt and freshly ground black pepper to taste.

Notes and Tips

Wild rice can be a little stubborn and brand-dependent. Some packages recommend 45 minutes, but you might need a bit more time. If you find the liquid has not been absorbed after the grains are tender, lift the lid and continue cooking a few extra minutes. Because we use chicken stock for flavor and nutrients, avoid draining away extra liquid if possible; instead, let it absorb into the rice or reduce gently.

For a vegan version, substitute water or a flavorful vegetable stock for the chicken stock. You can also add sautéed mushrooms or diced roasted vegetables for an even heartier side. Toasting the pistachios briefly before stirring them in will increase their aroma and crunch.

Serving Suggestions

This wild rice is excellent beside stews, roasted meats, grilled fish, or simply served with a green salad. A small portion complements protein-rich mains and provides slow-release energy for active days.
