They cook in a specialized ebelskiver pan and make a delightful change from the standard flat pancake. They work well for breakfast, a snack, an appetizer, a dessert, or even a lunch entrée.

What is an ebelskiver?

An ebelskiver (pronounced “EH-bul-skee-vur”) is a traditional Danish mini pancake. The batter is similar to pancake batter but the shape and method of cooking make ebelskivers airy and spherical. Typical fillings include fruit, jam, chocolate, cheese or savory ingredients — so they are versatile and delicious.

In this version, we combine sliced banana and a chocolate-peanut butter spread to create a stuffed treat with a gooey center. I used Reese’s Spreads for the peanut butter and chocolate flavor, but any thick peanut-chocolate spread would work. The spread is easy to pipe into the batter and melts into a creamy center.

You will need an ebelskiver pan to make authentic spherical ebelskivers. If you don’t have one, a cake pop pan or similar round-cavity pan can sometimes substitute, but an ebelskiver pan yields the best results. The process is straightforward and quick once the pan is warm and your batter and fillings are ready.

Step by Step directions for Banana Peanut Butter Chocolate Stuffed Ebelskivers

1. Prepare your pancake batter. Use your favorite mix — from-scratch or store-bought works fine. A buttermilk-style batter gives a tender, slightly tangy result.

2. Transfer the peanut butter–chocolate spread to a piping bag or a small resealable plastic bag with a tiny corner snipped off to make piping easier.

3. Gather all ingredients and preheat and grease the ebelskiver pan with cooking spray or a little oil. Greasing is important so the batter doesn’t stick once you start cooking.

4. Spoon batter into each cavity so each is about half full.

5. Quickly add a small scoop of chopped banana into the center of each cavity on top of the batter.

6. Pipe a small amount of the peanut butter-chocolate spread directly onto the banana in each cavity.

7. Cover the filling by adding more batter until the cavities are full.

8. When the tops begin to set and the edges pull away slightly from the cavities, use a fork, skewer or small spoon to flip each ebelskiver so the uncooked side cooks. It’s normal for a bit of batter to spill out while flipping; as long as the cavity remains mostly filled, the ebelskiver will cook into a round shape. Cook until golden brown on all sides and the centers are set and easy to remove. Serve warm.

Ingredients

  • 2 cups pancake batter (prepared from your favorite recipe or mix)
  • 1–2 bananas, chopped into small pieces
  • 1/4 cup peanut butter–chocolate spread (such as Reese’s Spreads or similar)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Mix the pancake batter and have it ready to spoon into the pan.
  2. Place the peanut-chocolate spread in a piping bag or a small plastic bag with the tip snipped off.
  3. Preheat and grease the ebelskiver pan. Work quickly once batter is added so fillings stay centered.
  4. Fill each cavity halfway with batter, add a small scoop of chopped banana, and pipe a bit of spread on top of the banana.
  5. Top each cavity with additional batter so it’s filled nearly to the top.
  6. When the tops start to cook and the edges pull away, flip the ebelskivers to brown evenly on all sides. Cook until golden and set, then remove and serve warm. Dust with powdered sugar if desired.
