Ingredients

  • 1 large cauliflower head
  • 1/4 cup pumpkin puree
  • 2 tbsp olive oil
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp pumpkin spice

Instructions

  • Preheat the oven to 400°F (200°C). Line the bottom of a Dutch oven or any ovenproof pot with parchment paper.
  • Rinse the cauliflower gently, keeping the florets intact. Pat it dry and trim the base so the head sits flat.
  • In a small bowl, whisk together the pumpkin puree, olive oil, pumpkin spice, and black pepper until smooth.
  • Place the cauliflower in the prepared pot. Pour the pumpkin-spice mixture over the head, using a brush or spoon to coat it evenly. The glaze will be paste-like but will loosen as it cooks. Cover the pot and roast for about 30 minutes.
  • Remove the lid and roast an additional 5–7 minutes to lightly crisp the exterior. Any liquid collected in the pan can be spooned over the cauliflower to keep it moist and flavorful.
  • When the cauliflower is browned and tender to your liking, transfer it to a cutting board. Slice into wedges or break into serving-size florets. Garnish with fresh herbs such as parsley or sage, if desired, and serve immediately.
